Here’s the streamlined way to heat it up and make it awesome.

1. Warm the chicken.
Toss the chicken into a non-stick or cast-iron skillet over medium heat. Add a splash of water or chicken stock (about a tablespoon or two should do it) or a squeeze of lime juice so it stays juicy. Let it cook for 5 minutes or so, stirring occasionally until hot and slightly crisped.
Sure, you can also heat it in the microwave – 2 minutes or so in a microwave safe bowl, covered with a paper towel – but it’s just not as satisfying (and I think it makes the chicken turn out a little gummy).
Pro tip: Want a flavor boost? Sprinkle in some chili powder, cumin, or a little hot sauce while it heats.

2. Heat the tortillas.
Again, I’d recommend skipping the microwave. Warm tortillas on a dry pan or griddle over medium-high heat for about 30 seconds per side until soft and slightly charred. Use tongs to flip them – they get hot. Stack them and wrap in foil or a clean towel to keep warm.

3. Slaw it up.
No need to get fancy—just toss the cabbage slaw with a squeeze of lime and a pinch of salt if you want it fresher. Or leave it as is.
4. Build your tacos.
Layer it up: tortilla, chicken, slaw, cheese, a drizzle of lime crema, and a spoon of salsa. Done.
