Delicious dutch-baby this morning at Tilikum Place Cafe!

Tonight I tried a new one out of Alison Roman's "Nothing Fancy" - roast chicken with tomatoes, over some crusty bread. Super flavorful with only a few spices, rich and hearty. This was a great recipe!

Drunken noodles!

First try at tortilla soup was a success! I simmered it for 4 hours this afternoon, and it turned out delicious. If you're interested, there are 2 versions of the recipe on the blog, one for stove top, and another for the Instant Pot. Remember: top with avocado, cilantro, tortilla chips and a squeeze of lime.

Yum! Grilled salad! (JK, its pizza with a ton of arugala.) For health! (JK, it's for flavor.)

Students often ask me what I'm eating when they notice my breakfast in the morning. In most cases, it's a container of overnight oats, one of the few easy breakfasts that actually keeps me full without being too heavy. It's It's few simple ingredients, can easily be made vegan using almond milk and pea protein, and has proven a good go-to meal for me over the last year or so. In case you're wondering how I make it, the recipe is on the blog now.

I almost forgot! I finally wrote up my recipe for slow-caramelized balsamic shallots and posted it on my blog. Here it is gracing some grilled bread and goat cheese. Check it out. Try it out. See what you think. Let me know.

I was looking for something to do with some @butcher_box ground beef (besides smashing burgers), so I decided on a beef bolognese, which has been simmering for about 4 hours now. The volume has reduced by about 40% in that time as the water has cooked off, leaving this thick and rich sauce that I have no immediate use for. Guess there's more pasta in my future. 😋 🍝
