Guacamole is delicious, and this homemade version is simple, quick, and could serve as a meal in itself, but goes well with most other things, such as my simple nachos!
For this recipe, you will need the following items:
- 2 ripe avocados
- 1 clove of garlic (crushed)
- 1 jalapeno pepper (diced)
- 15 sweet cherry tomatoes (quartered)
- 1 shallot (diced)
- 1/2 of a lime
Cut the avocados in half, remove the pits, and scoop into a mixing bowl.
Add garlic, diced pepper, tomatoes and diced shallot to the bowl.
Squeeze lime juice over the ingredients and mix well.
Properly mixed, this should not need additional seasoning, but if you would like, a pinch of salt, pepper, or chipotle chili powder can give this guac a nice little kick.
Serve with tortilla chips or your favorite mexican dish and enjoy!
