Every so often I really don’t feel like cooking anything, so I dig through the fridge to try to see what I can mix together. Yesterday was one of those days. My wife was meeting her mom for happy hour, and I just couldn’t motivate myself to whip something up all on my lonesome. So I started digging.
30 seconds later I laid the following fruits of my labor upon the kitchen counter:
- 1/3 lb leftover pasta
- half a large cucumber
- six sweet mini peppers
- 1/4 bag of turkey pepperoni
- 1/4 bottle of balsamic vinegar salad dressing
After a quick chop of the cukes and peppers, I mixed it all together (admittedly, it was a little heavy on the dressing) and dinner was served. Easy and tasty… just the way it should be!
