I know. I’m posting about salad. I’m not sure what’s wrong with me. Actually, I am… I came up with this one out of the blue, and decided to share it, because it tasted good, and that’s what I’m all about over here.
This is a simple salad with a clean and crisp fresh dressing. I would certainly consider it a more healthy option when compared to most store-bought dressings, although I think I may have negated the health factor by serving it alongside a big-ol’ BLAT on thick-sliced sourdough. But whatever hippie, go ahead and eat the salad by itself… BORING.
Salad Ingredients:

6 oz. Spring Mix

1 cucumber, chopped

1 avocado, cubed
Dressing Ingredients:

3 tbsp extra virgin olive oil

2 tbsp vegetable oil

Juice of 1 lime

½ tbsp honey

salt and pepper

1.5 tbsp fresh ginger

¼ cup fresh parsley
Place all of the dressing ingredients in a food processor, and puree the mixture until the ginger is smooth and the parsley leaves are uniformly small.
Place the salad ingredients in a mixing bowl, spoon on a dollop or two of dressing and toss, adding more dressing to your taste.
