Even taco night can be a little fancy with this simple avocado salsa! Rather than layering some sliced tomatoes and shredded iceberg atop you crumbled beef, why not whip up a bowl of this fresh salsa? The fresh veggies, nutty avocado and the citrus zip of the lime are the perfect combination to adorn any savory taco… or stand alone to be gobbled up with chips!
- 1/2 cup cherry tomatoes – halved
- 1 ripe avocado – cubed
- 2 tbsp fresh shallot – minced
- 1/4 cup red bell pepper – diced
- 1/4 cup fresh cilantro – chopped
- juice of 1 lime
- pinch of salt
This one’s wonderfully simple.
Prep all the ingredients as listed.
In a medium-sized bowl, fold everything together.
Season the salsa to taste. If you’d like it a little sweeter, add a touch of honey or agave syrup, both of which are handy to have lying around.
Throw it on tacos, serve it up with chips, or eat it with a spoon… it’s that good.
