Like many people, I’ve started a new and intense relationship with a countertop appliance; the air fryer. It’s difficult not to take the air fryer craze as one big culinary joke, especially since certain brands (*ahem* – NINJA) seemed to be integrating the technology into strange configurations – I mean, who doesn’t need a fryer that also dehydrates and grills?
Me. I don’t need that.
Regardless, my wife purchased my first air fryer on a lark when she brought home a marked-down air-fryer attachment for our Instant Pot. After a few rounds of trial and error, and some obligatory guffaws, we quickly came to realize that this ridiculous device was – in fact – not so ridiculous. Especially considering quickly-made chicken nugget dinners for the kids, or deciding if we want a side of fries, it turns out that a countertop air fryer can be prey damn convenient.
So we upgraded. We got rid of the instant pot, and replaced it with a Cosori, a well-rated and decently priced device that has since found it’s way to the countertop at least once or twice a week. It’s fast, it’s useful, and it makes experimenting with recipes decently simple. In fact, that’s how I landed on this baby potato recipe, that you should definitely try out.
Ingredients:
- 1.5 lbs baby/fingerling potatoes – cut into similar-sized pieces (halved or quartered)
- 2 tbs extra virgin olive oil
- Salt and pepper
- Spices of your choosing. I used:
- Trader Joe’s South African Smoke (paprika, salt, garlic, basil)
- Smoked paprika
- Garlic powder
- Tumeric
Instructions:
- Preheat the air fryer (as usual)
- Slice the potatoes, and combine them in a large bowl with the oil, a dusting of salt and pepper and your choice of spices.
- Note: Start with a half teaspoon of your spices and adjust from there.
- Place the seasoned potatoes in your air fryer basket
- Set the air fryer to 400 degrees (F) for 10 minutes
- Toss the potatoes around in the fryer basket, and set it for another 10-12 minutes.
- If you’re unsure about the fryer time, set it for less: you can always add cooking time, but it unfortunately doesn’t work the other way
- When they’re done, remove the potatoes to a serving bowl, and give them a quick dusting of salt (to taste)
- Serve and enjoy!
