This is nothing revolutionary, but it’s a new recipe of mine for grilled chicken that could be served as tacos, fajitas, or simply over rice.
Marinade Ingredients:
- 1/2 tsp smoked paprika
- 1 tsp cumin
- 1 tbsp brown sugar
- 2 chipotle chiles in adobo
- 1 tbsp adobo sauce
- ½ medium white onion
- 3 garlic cloves
- salt and pepper
- ½ tsp cinnamon
- ½ tsp thyme
- ½ tsp oregano
- 1 tbsp olive oil
For serving:
- 1 tsp fresh, chopped cilantro
- juice of 1 lime
Marinate chicken in pureed mixture of marinade ingredients (use a food processor) for an hour.
Grill over medium-high heat.
Serve with a squeeze of lime and a pinch of cilantro.
